We call it New Tel Aviv Cuisine. Tel Aviv's food culture is a conglomerate of Arabic dishes, memories of Jewish grandparents' recipes and culinary fashions from all over the world. That's exactly what we do here, only in our own way, seen through Frankfurt's glasses." (James Ardinast)

BAR SHUKA

Freshly baked pita bread from the oven, Jerusalem kebab on an open fire, green sauce made from Mediterranean herbs, zaatar from the mountains, a show kitchen and a bit of chaos: the BAR SHUKA restaurant, located in the 25hours Hotel The Trip, is a tribute to the oriental market. Shuk stands for marketplace. With this restaurant, the two brothers James and David Ardinast go back to their roots more than ever before and quote from them: well-known dishes and flavours from Middle Eastern cuisine meet regional Frankfurt ingredients, with accents from Yiddish cuisine here and there. "We call it New Tel Aviv Cuisine. Tel Aviv's food culture is a conglomerate of Arabic dishes, memories of Jewish grandparents' recipes and culinary fashions from all over the world. That's exactly what we do here, only in our own way, seen through Frankfurt's glasses." (James Ardinast)
